Summer Salsa Recipe

This delicious and fresh-tasting salsa does take a little time to chop up veggies, but oh, is it worth it, and a great way to use those tomatoes and peppers from the garden. This can be eaten with any meal (or almost as a meal)…and in great quantities as it is low in calories. It is also beautiful to look at! Enjoy!!
Ingredients:
1 small onion, finely chopped
1 garlic clove, finely chopped
4 Roma tomatoes, finely chopped
½ of a red, a yellow, and a green bell pepper (yes, all three)
1 cup of canned black beans, rinsed
1 cup of corn
¼ cup of chopped cilantro (optional)
For dressing:
1 lime with
¼ tsp lime zest
pinch of salt
olive oil
Directions: mix all ingredients together, then squeeze the lime juice in, lime zest, salt (as needed) and drizzle with olive oil.
Mix gently to finish.
