This delicious recipe features a Maine made spice mixture and is the perfect side dish to accompany any meal.
2-2.5 lb small fresh beets
2 Tablespoons Extra Virgin Olive Oil
1-2 Tablespoons Regina Spices Maine-Sweet Pepper (mixture)
1 Tablespoon Balsamic Vinegar
Pre-heat oven 375
Wash and trim the roots of the beets.
Cover with water and simmer for about ½ hour; rinse under cold water.
While rinsing, gently peel the outer skin off the beets.
Place the beets in an oven-safe dish, toss with the olive oil and Maine-Sweet Pepper.
Roast for about 15 mins, stir occasionally; The beets will begin to caramelize.
Sprinkle balsamic vinegar and roast for an additional 5 minutes.
