Maine-Sweet Pepper Roasted Baby Beets

Roasted Beet Recipe

This delicious recipe features a Maine made spice mixture and is the perfect side dish to accompany any meal.


  • 2-2.5 lb small fresh beets

  • 2 Tablespoons Extra Virgin Olive Oil

  • 1-2 Tablespoons Regina Spices Maine-Sweet Pepper (mixture)

  • 1 Tablespoon Balsamic Vinegar

  1. Pre-heat oven 375

  2. Wash and trim the roots of the beets.

  3. Cover with water and simmer for about ½ hour; rinse under cold water.

  4. While rinsing, gently peel the outer skin off the beets.

  5. Place the beets in an oven-safe dish, toss with the olive oil and Maine-Sweet Pepper.

  6. Roast for about 15 mins, stir occasionally; The beets will begin to caramelize.

  7. Sprinkle balsamic vinegar and roast for an additional 5 minutes.
