Shish Taook is one of my favorite chicken recipes which I brought home from the middle-east. It originates in Turkey.
The recommended amount of garlic and tomato paste can be adjusted according to your preference. I like to use a little more tomato paste.
This marinade can be used to make tender and juicy chicken kabobs or chicken thighs, either grilled or in the oven. Just because it's winter in Maine doesn't mean you have to put the grill away. ;)

Here is what you'll need:
Chicken - your preference
4-5 garlic cloves, chopped
2 Tablespoons tomato paste ( I use more)
2 Tablespoons freshly squeezed lemon juice
1 teaspoon paprika, 1 teaspoon cumin powder, ¾ teaspoon Allspice, ¾ teaspoon salt
1 Tablespoon oil
Mix all of the above ingredients together then add chicken to coat.
Let the marinade do it's thing for several hours or even better, leave it overnight.
Grill until done, or bake 350 degrees about 25 minutes until chicken is cooked through.
Serve with rice, or grilled vegetables.
